Making Japanese Sakura Jelly: Secret Tips Unveiled

Japanese cherry blossom (sakura) jelly, with a whole cherry blossom encased within, is a visually stunning dessert that showcases the delicate beauty of the flower through crystal-clear jelly. Here’s a refined method to create authentic Japanese cherry blossom jelly.

Ingredients:

  • Salt-preserved cherry blossoms: 4-6 flowers
  • For the milk layer:
    • Water: 75ml
    • Milk: 80ml
    • Milk powder: 8g
    • Gelatin powder: 4g
    • White sugar: 20g
  • For the clear layer:
    • Water: 200ml
    • Honey: 20g
    • Gelatin powder: 5g
    • Lemon juice: 2-3 drops

Instructions:

STEP 01: Prepare the Cherry Blossoms

Gently rinse the salt-preserved cherry blossoms in cold water twice to remove excess salt. Then, soak them in warm water (about 40°C/104°F) for 5 minutes to rehydrate and soften the petals.

STEP 02: Create the Sugar Syrup

In a small saucepan, combine 75ml of water and 20g of white sugar. Heat over low flame, stirring gently until the sugar completely dissolves. Remove from heat once dissolved.

STEP 03: Prepare the Milk Mixture

In a separate bowl, thoroughly mix the milk powder with the sugar syrup until smooth. Gradually add the warm milk (about 40°C/104°F), stirring constantly to ensure a homogeneous mixture.

STEP 04: Add Gelatin to Milk Mixture

Sprinkle 4g of gelatin powder over 2 tablespoons of cold water and let it bloom for 5 minutes. Microwave for 10 seconds or until fully dissolved. Stir this into the milk mixture until well incorporated. Allow to cool to room temperature.

STEP 05: Set the First Layer

Pour the milk mixture into glasses, filling them about halfway. Refrigerate for 1 hour or until the jelly is set but still slightly tacky to the touch.

STEP 06: Prepare the Clear Gelatin Layer

In a bowl, sprinkle 5g of gelatin powder over 3 tablespoons of cold water and let it bloom for 5 minutes. In a separate container, combine 200ml of water with 20g of honey and 2-3 drops of lemon juice. Heat this mixture gently until warm, then add the bloomed gelatin, stirring until completely dissolved.

STEP 07: Place the Cherry Blossoms

Remove the glasses from the refrigerator. Gently place a prepared cherry blossom on top of the set milk layer in each glass. If desired, carefully separate the petals using a toothpick for a more open flower appearance.

STEP 08: Add the Clear Layer

Slowly pour the clear gelatin mixture over the cherry blossom in each glass, being careful not to disturb the flower’s position. The clear layer should completely cover the blossom.

STEP 09: Final Setting

Return the glasses to the refrigerator and chill for at least 2 hours, or until the clear layer is fully set.

STEP 10: Serve

Before serving, let the jelly stand at room temperature for 5-10 minutes to showcase its crystal-clear beauty. Enjoy this delicate and visually stunning Japanese delicacy.
